Coconut Chia Pudding
Sometimes I want to change up my morning smoothie for something with a bit of texture and creaminess. This chia seed pudding has become my favorite breakfast in the past couple weeks - it keeps me full all morning and supports very regular digestion. It can also slide into my schedule as a delicious afternoon snack or dessert.
Chia pudding is filled with quality fiber and plant protein. When chia seeds soak and activate, they become a gelatinous consistency that it fantastic for cleaning the colon as it moves through the digestive tract. Chia seeds are also rich in Omega 3's, which are essential fatty acids that most people are lacking in their diet. Increasing your Omega 3 intake supports inflammation, brain, heart and joint health.
This is a simple base recipe - feel free to add in your own touches to make it your own...
Ingredients:
- 2 Tbsp Dry Chia Seeds
- 1 Tbsp Ground Flax Seed
- 3/4 cup Almond Milk
- 2 Tbsp Lite Coconut Milk (from can for extra creaminess)
- 1/2 tsp vanilla extract
- Sprinkle of Stevia for desired sweetness
- Dash of cinnamon
- Choice of fruit for topping
- *Optional: Honey for topping
For Extra Filling Breakfast
- Add 1/8 cup of dry oats
Directions
Simply mix all ingredients in an airtight container (I use a small mason jar), stir well, cover, and place in the fridge for at least 2 hours or overnight. The longer it sits, the thicker the consistency will be. I always prep mine at night so I can grab and go in the morning. When you're ready to eat, give it a good shake or stir to mix it all even, top with favorite fruit and optional honey or spices. Enjoy!
